Capparis spinosa

Capparis spinosa (prickly from Latin) is an extremely common plant in Cyprus, encountered everywhere at an altitude lower than 850 metres. Its fresh sprouts are edible having been traeted a special preparation, initially with water, until the leaves turn to yellow-green, and then with wite vinegar. The same procedure stands for its young buds and seed capsules. Spinosa is the only capparis species in Cyprus and it blooms from May.
